Vegan Mushroom and Leek Pie Recipe

Instructions Prepare the crust:  In a large mixing bowl, combine the flour and salt.Add the chilled vegan butter cubes and use a pastry cutter or your hands to mix until the mixture resembles coarse crumbs.

Prepare the Filling: In a large skillet, heat the olive oil over medium heat. Add the sliced leeks and cook, stirring occasionally, until softened, about 5 minutes.

Assemble the Pie: Preheat your oven to 375°F (190°C).  On a lightly floured surface, roll out one disc of dough to fit your pie dish. Carefully transfer the dough to the dish, pressing it gently to fit .

Bake the Pie:  Place the pie on a baking sheet to catch any drips. Bake for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.

Serve and Enjoy: Serve warm, alongside a green salad or your favorite vegan side dishes.

Storage:  Any leftovers can be stored in the refrigerator for up to 3 days. Reheat in the oven for a few minutes before serving.
