Mini Apple Pies!

Instructions Prepare the Dough:  In a large bowl, mix the flour, salt, and sugar.  Add the cold butter cubes to the flour mixture and use a pastry cutter or your hands to mix until it resembles coarse crumbs.

Make the Filling:  In a medium saucepan, combine the diced apples, sugar, lemon juice, cinnamon, and nutmeg.

– Cook over medium heat until the apples begin to soften, about 10 minutes. – Dissolve the cornstarch in the water and add it to the apple mixture. Cook until the filling thickens, about 2-3 minutes.

Assemble the Mini Pies: Preheat your oven to 375°F (190°C). Grease a muffin tin or line with muffin liners.

Bake in the preheated oven for 20-25 minutes, or until the crust is golden brown and the filling is bubbly.

 Allow the mini pies to cool in the muffin tin for about 10 minutes before transferring to a wire rack to cool completely.
